Ricotta & Lemon
Ingredients

Step 1
Fill a medium pot with water.

Step 2
Bring the water to a boil.

Step 3
Add salt and pasta to the boiling water.

Step 4
Cook the pasta according to package directions until al dente.

Step 5
While pasta cooks, zest the lemon into a large serving bowl.

Step 6
Juice half of the lemon into the bowl.

Step 7
Add ricotta cheese and olive oil to the bowl, then season with salt and pepper.

Step 8
Drain the cooked pasta, reserving ½ cup of pasta water.

Step 9
Add the hot, drained pasta and ¼ cup reserved pasta water to the bowl.

Step 10
Toss vigorously until the ricotta forms a creamy sauce, adding more pasta water if needed.
